5 ripe bananas sliced and frozen
5 medjool dates
1/4 cup cocoa powder
1/4 cup peanut butter (smooth or crunchy)
1 can coconut milk full fat chilled
Peal slice and freeze the banana one day before making. Place all ingredients except the coconut milk in a food processor. Open the coconut milk and spoon out the cream into the food processor. Retain the remaining liquid. Process all ingredients adding the retained liquid a little at a time until smooth.
Pour mixture into a freezer proof dish and spread it evenly with a spatula. At this point you can have it as soft serve or freeze until you can scoop it out.
Warning; frozen bananas need a chisel to separate them so you will have to pry them apart after leaving them out for about 5 minutes.

One of my favorite research items is cacao or chocolate.
Improves heart health – Cacao is rich in magnesium which helps your heart function. 80% of North Americans are magnesium deficient
Antioxidants – prevent cell damage and keep your body healthy
Fun fact: Montezuma drank 50 cups of cocoa per day. One extra cup before romantic liaisons. Cacao is thought to be an aphrodisiac so Casanova drank cocoa prior to romantic encounters and even the Marquis de Sade drank cocoa.

Peanuts have recently been found to be as healthy as tree nuts. Researchers have noted a reduction in death from all causes in those that consume a small handful of peanuts daily.

I could spend an entire day raving about the health benefits of coconut milk but here are just a couple of surprising facts.
Coconut oil (cream) actually helps you lose weight. Your body processes it differently than other fats and it actually signals that it is ok for your body to release stored fat.
Coconut oil fits the same receptor cells on your brain as glucose. As we age our brains become glucose intolerant. The coconut oil will then fit these receptor cells and feed your brain.
I have a number of blogs on coconut. Here is a good one to start with.
Whether you are trying to improve your health or you just want a delicious alternative to frozen desserts, this is a recipe you will want to make over and over.
